Welcome to Food and Nutrition 1. This course examines the nutritiional needs of the individual. Emphasis is placed on fundamentals of food production, kitchen and meal management, food groups and their preparation and time and resource management. Students also are provided with an opportunity to join Family, Career, Leaders of American, the only Career Technical Student Organization where family is the focus. FCCLA provides students with many opportunities in competitive events, community service, and leadership. Students also gain insightful knowledge concerning workplace readiness skills, job opportunities, and a look at the pulse of the job market.
In my free time I love to sew, embroider, design, cook, and even cater. I am a native of Charlotte, N.C. but have lived in Cabarrus County for 38 years. I am in my 24th year of teaching coming from industry where I was the Director of Clinical Nutrition. I have two children that are both Central graduates. I graduated from Appalachian State University (B.S.) degree in Family and Consumer Science with an emphasis in Nutrition and Dietetics and a minor in Chemistry, and from Winthrop University (M.S.) degree in Environmental Science with an emphasis on Nutrition and Public Health.

I also serve as the Chair for District 6 (Cabarrus, Mecklenburg, Union, Stanly, Anson, Lincoln, and Gaston) State Leadership Council. In the summer of 2020 I was selected as the recipient of the Everlene Davis Award which is given to a Family and Consumer Science teacher that exemplifies excellence in the field of Family and Consumer Science and FCCLA. I am the lead adviser for FCCLA a career technical student organization and feels it provides students with lifelong experiences.
Students will be provided instruction through the learning management system Canvas. All the assignments, instructions, and resources will be delivered through Canvas and we will meet face to face on Microsoft Teams. You will receive an email from me requesting you to join the Microsoft Team for your class. My goal as an educator whether online or in person is to provide the student with an amazing learning opportunity.
